Chocolate Chip Cookie Bark
I was looking for something to make for Christmas gifts this year and I have seen a few different combinations of Chocolate bark. This recipe combined a lot of chocolate but looked awesome and was fairly easy to make. You could make it with store bought cookies if you were short on time. I decided to make my own.
So first you need to make the cookies. Place the butter into the bowl of your stand mixer and beat until smooth and creamy. Add the brown sugar and beat until fluffy and light in colour. Beat in the egg yolk and vanilla until combined. Just make sure that you scrape down the sides of the bowl if you need to.
Sift together the flour, baking soda and salt in another bowl. Combine with the wet ingredients on a low speed. Add the chocolate chips and mix on low for a minute until well distributed. Remove the dough from the bowl and cover with aluminium foil and chill in the fridge for 30 minutes.
Preheat the oven to 170 degrees Celsius and line 2 baking trays with baking paper. Remove the dough from the fridge and scoop into balls (approximately 1 and a half teaspoons). Bake in the oven for 10-11 minutes. Allow for the cookies to cool on the baking tray for 5 minutes before moving them to a wire rack to cool completely. This recipe will make more than you need but you won't have any trouble getting rid of the extras!
To make the main event, the bark. Line a tray 20 centimetres by 30 centimetre with baking paper. First you will need to melt the milk chocolate. Break or chop the chocolate into approximately 1-2 centimetre pieces. Place in a microwave proof bowl and place in the microwave. Melt for 30 seconds at a time, stirring in between until melted and smooth. Pour the melted chocolate into the tray and use a spatula to spread the chocolate evenly. Place the tray in the fridge for 20 minutes to almost set.
Repeat the process with the white chocolate and pour over the milk chocolate. Finally for the fun part, before returning the tray to the fridge, break up 10-12 cookies and put them on top of the chocolate. To that I added chocolate dots and some red sugar that I had. The options are endless! Just use what ever you have in the pantry or whatever you like.
I am sure that this is going to a Christmas regular. It is great and easy to make but easily adapted to please every one's tastes. Most importantly it looks great and tastes even better.
The only other thing that I would suggest it to use a good quality chocolate. You can really tell the difference.

- 85 gram unsalted butter, at room temperature
- 1/2 cup brown sugar, packed
- 1 egg yolk
- 1 teaspoon vanilla essence
- 1 cup plain flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips
- 220 grams milk chocolate
- 220 grams white chocolate
- Decorations- mini chocolate chips, coloured sugar
