Fancy Chocolate Cake
Well another birthday cake this week for one of my co-workers. When I ask what he wanted he said he wanted a chocolate cake. When I asked what type of chocolate cake he said he didn't care. I have seen this cake doing the rounds so thought it might be a good time to give it a try.
Start by preheating your oven to 180 degree celcius and prepare 2 20 centimeter cake tins. Lining the bottom with baking paper.
Place the sugar in a large mixing bowl or your stand mixer, followed by the salt, baking powder, baking soda and corn flour. Whisk together briefly. Then add the flour, cocoa and instant coffee powder on top of the mixture. Slowly pour the boiling water over the top. Once all added stir vigorously and stream in the oil.
Add the eggs and vanilla extract and finally the buttermilk. Scrape down the sides of the bowl and ensure that the mixture is well combined. Pour into your prepared cake tins and bake for 18-22 minutes.
Allow the cakes to cool completely before icing.
For the icing beat the butter until pale and fluffy. Turn off mixer, otherwise it will get messy, and add the sifted icing sugar, cocoa and milk. Mix until smooth.
To assemble the cake. You will need the cakes to be flat on the top so trim the top of both cakes now to make for a better result. Place the first cake on the serving plate. Spread about a quarter of the icing on top of the cake with a spatula. Place the second cake on and coat with the remaining icing. To decorate start with the biscuits around the outside of the cake. The buttercream acts as a glue to keep them on the side of the cake. I did pin a ribbon around mine but it was purely for decoration.
Finally to decorate the top use the biscuits to separate the top into 6 sections. You can use what ever you want to decorate the top. I used M & M and Malteasers.

This cake was fairly easy to make but the decorations make it look spectacular. It also allows for you to use what ever chocolates or lollies you or the cake recipient might like.

***Ingredients
- 330 grams caster sugar
- 1 1/4 teaspoon salt
- 1 1/2 teaspoon baking soda
- 1 1/2 teaspoon baking powder
- 2 teaspoons corn flour
- 180 grams plain flour
- 65 grams dark cocoa powder
- 1 tablespoon instant coffee
- 1/2 cup boiling water
- 85 grams vegetable oil
- 2 eggs
- 2 tablespoons vanilla extract
- 2/3 cup buttermilk
Chocolate Buttercream Icing
- 250 grams butter, at room temperature
- 2 cups icing sugar
- 1/2 cup cocoa, sifted
- 1/4 milk
Top of the cake
- Chocolate finger biscuits
- Chocolate or lollies to decorate the top
