Pulled Barbecue Chicken- Slow Cooked
On holiday a couple of months ago many of the place we ate at had pulled pork on their menu. However I am not a huge fan of pork so I have been looking for a good chicken alternative. This can recipe came up on my news feed and I thought that it sounded great so I would give it a go. As it is cooked in the slow cooked for around 6 hours in total some forward planning is required but the end result is amazing. The side options are endless but as you can see below I opted to serve mine in a roll with coleslaw and onion rings on the side. (I will post this recipe too!)
Firstly place the chicken into the slow cooker. In a bowl whisk together the barbecue sauce, Italian dressing, sugar and Worcestershire sauce. Pour the sauce over the chicken and put the lid on the slow cooker. Cook on low for 4 1/2 to 5 hours.
After this time remove the chicken from the slow cooker and put on your chopping board. In a small bowl mix together the corn flour and chicken stock. Stir this into the sauce in the slow cooker. Put the lid back on the slow cooker and cook on high for 15 minutes to thicken the sauce. In the meantime using 2 forks shred the chicken.
Before returning the shredded chicken to the slow cooker taste the sauce. If you want to at this time add the extra barbecue sauce to increase the flavour. Return the shredded chicken to the thickened sauce. Stir to coat the chicken and cook on low for a further 45 minutes.
This was really well received and was really easy to make. It would be easy to make for a large group of people. The 900 grams easily would be enough for 6 people. Depending on the side that you serve with it you could probably spread it further.

- 900 grams chicken breast, boneless & skinless
- 1 cup Barbecue Sauce, one you really like
- 1/3 cup Italian Dressing
- 2 tablespoons packed brown sugar
- 1 tablespoon Worcestershire Sauce
- 2 tablespoons corn flour
- 2 tablespoons chicken stock
- 1/4 cup Barbecue sauce, optional
