Meatloaf

It is starting to get colder and comfort food is starting to sound really good. I was looking for something easy but yummy for dinner. I have always been a sucker for meatloaf and when I was in the USA recently I came across this recipe and thought I would give it a go.

Preheat your oven to 180 degrees Celsius. Pour the milk over your breadcrumbs and allow them to soak up the liquid. (For approximately 5 minutes.)

In another bowl mix together the mince meat, soaked breadcrumbs, Parmesan, salt, black pepper and parsley. Pour in the eggs. With your clean hands mix the ingredients together.

Now to prepare the pan. I used a loaf tin (20 cm x 10 cm x 7cm), spray the inside of the tin with cooking spray. Now used the bacon to cover the inside on the tin. I found for the neatest result start at one end and then work your way down. Then do the ends separately. It is hard to explain so there is an image below of where to start.

Once the inside of the tin is cover put in your meat mixture. Spoon it in carefully to try and avoid moving the bacon. As you spoon the mixture in use the back of the spoon to press the mixture down. Once full cover the top with foil, place on a tray with side and place in the oven. Cook for 20 minutes.

In the meantime prepare the sauce. Combine the ingredient and set aside.

After the 20 minutes turn the meatloaf out onto a wire rack so that the bacon covered bottom of the meatloaf is exposed. By cooking it on a wire rack it allows for some of the fat to drain off. (You will need to use a wire rack that you can put over a tray, so that the tray can catch the liquids that come out of the meatloaf.) Now brush the sauce over the bacon and return to the oven for a further 30-40 minutes. About half way through the cooking time brush again with the sauce.

When the bacon begins to crisp the meat loaf will be cooked through. Unfortunately I forgot to take pictures of the finished product. But I will be making this one again soon. It was relatively easy and everyone enjoyed it. This is a recipe that will definitely become a regular for me, especially over winter.

Meatloaf

  • 1 cup of milk
  • 1 cup of fresh breadcrumbs
  • 800g beef mince
  • 1 cup of fresh finely grated Parmesan cheese
  • 1 teaspoon of salt
  • Fresh group pepper
  • 1/3 cup minced flat leaf parsley
  • 4 eggs
  • 10-12 slice of streaky bacon
Sauce
  • 1 1/2 cups tomato sauce
  • 1/3 cup brown sugar
  • 1 teaspoon dry mustard
