Sweet Potato Soup

Well the cold weather has hit and it is time for soup. I love sweet potatoes so I thought that I would give this recipe. So here goes. Preheat your oven to 180 degrees celcius. Peel and cut the sweet potatoes into 3 cm cubes. Place them along with the garlic cloves and the onion sliced into wedges into a large roasting tray. Drizzle the maple syrup and olive oil over the sweet potatoes, onion and garlic and toss to coat. Place the tray into the oven to roast for 40 minutes or until the sweet potato is cooked through. Once cooked put the roasted vegetables into a large pot with the stock. Bring to the boil. Once boiling reduce the heat and simmer for 5 minutes. Then remove from the heat and allow to cool slightly, (around 5 minutes.) In batches blend the soup until smooth and return to the saucepan. Over a low heat, add 3/4 of a cup of cream to the mixture. Linguine with Meatballs

I had been going through some of my old magazines and came across this dish. The recipe wasn't exactly how I wanted it so I made a few adjustments, like the Parmesan and breadcrumbs in the meatballs and the capsicum and the herbs in the sauce. I am always a little wary when I change a recipe but I think that it definitely gave this more flavour. Firstly put on a large pot of water to cook the pasta and preheat the oven to 180 degrees celcuis. Now to make the meat balls, in a large mixing bowl combine the milk and the breadcrumbs. Allow the breadcrumbs to soak up all the milk. When they have adsorbed the liquid add all the ingredients (except for the olive oil) in to the bowl. With clean hand mix the ingredients together until well combined. Once combined roll into meatballs, mine were about the size of a ping pong ball. (It should make around 25.) Meatloaf

It is starting to get colder and comfort food is starting to sound really good. I was looking for something easy but yummy for dinner. I have always been a sucker for meatloaf and when I was in the USA recently I came across this recipe and thought I would give it a go. Preheat your oven to 180 degrees Celsius. Pour the milk over your breadcrumbs and allow them to soak up the liquid. (For approximately 5 minutes.) In another bowl mix together the mince meat, soaked breadcrumbs, Parmesan, salt, black pepper and parsley. Pour in the eggs. With your clean hands mix the ingredients together. Now to prepare the pan. I used a loaf tin (20 cm x 10 cm x 7cm), spray the inside of the tin with cooking spray. Now used the bacon to cover the inside on the tin. I found for the neatest result start at one end and then work your way down. Then do the ends separately. It is hard to explain so there is an image below of where to start.
