Mars Bar Cheesecake

Well even though I am in Christmas mode there is still a birthday cake to make. This one was a lot easier than I thought it would be and looks impressive.

Importantly, remove 2 x 250 gram packets of cream cheese from the fridge to soften whilst you make the base.

For the base put 250 grams of plain chocolate biscuits into a food processor and process to a fine crumb. Melt 150 grams of butter. Pour into the food processor and bring together the mixture. Pour the mixture into a 20 cm spring form tin lined with baking paper, smooth out over the base. Refrigerate for 30 minutes whilst you make the filling.

First for the caramel, in a small saucepan combine 2 tablespoons of cream, 2 tablespoons of brown sugar and 20 grams of butter. Over a low heat allow sugar to melt for 3-4 minutes. Set aside for now.

Now for the chocolate sauce, in a separate saucepan melt 50 grams of milk chocolate with 2 tablespoons of cream. Make sure it is a low heat to avoid burning the chocolate. Once combined set aside.

Dissolve 3 teaspoons of gelatin in 60 ml of boiling water. Whisk together until gelatin is dissolved. Set aside and allow to cool slightly.

Using an electric beater combine the 2 blocks of cream cheese with 110 grams of caster sugar until smooth.

In another bowl whisk (or beat) 300 ml of thickened cream to soft peaks. And set aside.

Now to begin to combine, mix the gelatin mixture and 3 Mars bars (roughly chopped) through the cream cheese. Finally fold the cream into the cream cheese mixture.

Pour half the cream cheese mixture on to the chilled base. Spread out and pour half the caramel and chocolate sauces on top. Use a skewer and drag it through the cream cheese to create a marble effect. Pour the remainder of the cream cheese on top and repeat the process with the remaining sauces.

Cover with cling wrap and refrigerate for 3 hours, preferable over night, to allow it to set.

I chopped up another Mars Bar and used to to decorate as you can see below.


There is heaps of options with this recipe, you could use almost any chocolate bar to create the flavour that you like.

Caramel
  • 2 tbs of cream
  • 2 tbs brown sugar
  • 20 g butter
Chocolate Sauce
  • 50 g milk chocolate
  • 2 tbs cream
