Blueberry Muffins

I love blueberries and they are on special this week so I had to buy some. So I decided to make some muffins. They are pretty easy so here goes. Preheat the oven to 200 degrees celcius. The recipe makes 12 muffins so you will need a 12 hole muffin tin. Grease it if you are not using muffin liners. Sift the flour's into a mixing bowl and stir in the sugar. In a bowl mix together the egg, milk, vanilla and oil. Make a well in the flour and pour in the liquid. Mix together. Add the blueberries and stir gently. Be careful not to be to rough with the berries. Divide the mixture evenly amongst the muffin cases. Bake for 15-20 minutes until lightly browned. Allow the muffins to stand for a few minutes before removing them from the tin. They are best served warm but they are good cold too. Until next time, happy cooking, Kate. ***Ingredients 1 1/2 cups self-raising flour 1/2 plain flour 1/2 caster ugar 1 egg 3/4 cup milk 1 teaspoon vanilla essence 3/4 cup light vegetable oil ...
